Sweet Potato Rosti

Did someone say brunch? Slightly sweet, cheesy and 100% delicious, we’ve paired these rostis with a creamy bacon mayo with just the right kick to take your brunch to the next level!

Cook time: 15 minutes
- 500g grated sweet potato
- 3 Tbsp plain flour
- 2 Tbsp Deliciou Vegan Cheese Seasoning
- ½ cup vegan mayonnaise
- 2 tsp Deliciou Original Bacon Seasoning
- Mix the grated sweet potato, flour and Deliciou Vegan Cheese Seasoning in a bowl. Add salt & pepper to taste, mix through, then form 6-8 thin patties.
- In a pan on medium-high heat, heat up 3-4 Tbsp oil. Fry each patty until golden brown and crispy on both sides. Place on paper towel to get rid of excess oil.
- Mix the vegan mayonnaise and Deliciou Original Bacon Seasoning together.
- Serve hot rostis with a dollop of bacon mayo and enjoy!
Pro tip: Try adding some mashed avocado, fried mushrooms and tomatoes for a heavenly hearty vegan breakfast!
